Recipe Friday - Tenderloin Peanut Noodles

This is one of those throw together everything and hope it turns out meals. I wasn't sure how it would go but it turned out great! I, of course, used deer but I'm sure you could use chicken or beef.

Tenderloin Peanut Noodles

2 pounds tenderloin, sliced
2 tbsp soy sauce
1 cup teryaki sauce
1 tsp ginger
1 tsp garlic
1 tsp oregano
1/2 cup olive oil

1 packet stir fry seasoning
1 package Ramen noodles
3/4 cup peanut butter

1 package frozen stir fry veggies

Combine soy, teryaki, ginger, garlic, oregano and oil in zip top bag, add tenderloin and marinate at least overnight.

Combine stir fry seasoning packet, ramen seasoning packet and 1/4 cup water. Set aside. Cook noodles according to package and drain.

Heat skillet over medium high heat, add veggies and cook until tender crisp. Remove from pan. Add tenderloin and cook through. Remove from pan, leaving any liquid. Add seasoning mix and peanut butter to pan, stir until combined and thickened. Add back in tenderloin, noodles and veggies, remove from heat and toss to cover in sauce. Serve immediately.
