Menu Monday

Here's the plan for the week, we'll see how it goes! This is the start of my once a month grocery shopping (although I haven't been to the store yet). The goal for the month is $400. This weeks menu shouldn't require a trip to the store except for milk, lettuce and wings for this weekend.

Monday - Pesto pasta with Italian sausage
Tuesday - Chili with Cornbread
Wednesday - Chicken and Dumplings
Thursday - Tacos
Friday - Leftovers
Saturday - Balsamic Chicken and rice
Sunday - Pizza and wings for the game

Future Ski Bunny!

We took Ladybug skiing for the first time (Daddy skis, I take pictures). She was so excited about everything, she couldn't wait to get out there! Can't you tell?





Here they go!

After doing a couple of trips down the bunny slope they were off to the Salamander (the long beginners slope that goes all the way down the mountain). It took a while for them to make it back down but she was still happy and wanted to do it again.

Recipe Friday - Tenderloin Peanut Noodles

This is one of those throw together everything and hope it turns out meals. I wasn't sure how it would go but it turned out great! I, of course, used deer but I'm sure you could use chicken or beef.

Tenderloin Peanut Noodles

2 pounds tenderloin, sliced
2 tbsp soy sauce
1 cup teryaki sauce
1 tsp ginger
1 tsp garlic
1 tsp oregano
1/2 cup olive oil

1 packet stir fry seasoning
1 package Ramen noodles
3/4 cup peanut butter

1 package frozen stir fry veggies

Combine soy, teryaki, ginger, garlic, oregano and oil in zip top bag, add tenderloin and marinate at least overnight.

Combine stir fry seasoning packet, ramen seasoning packet and 1/4 cup water. Set aside. Cook noodles according to package and drain.

Heat skillet over medium high heat, add veggies and cook until tender crisp. Remove from pan. Add tenderloin and cook through. Remove from pan, leaving any liquid. Add seasoning mix and peanut butter to pan, stir until combined and thickened. Add back in tenderloin, noodles and veggies, remove from heat and toss to cover in sauce. Serve immediately.

Menu Monday

Good Morning, I have been really lax about following my menu plans lately (something about the holidays gets me all out of rhythm). This week I'm hoping to get back on schedule and if not then I'll start again in February. We don't have much going on this week and we will be skiing over the weekend so I won't have any choice but to cook!

Monday - Teryaki Tenderloin with stir fry veggies
Tuesday - Red beans and dirty rice
Wednesday - Mahi Creole, Butter Noodles
Thursday - Leftovers
Friday - Spaghetti
Saturday - Chicken Pot Pie, Roasted Broccoli
Sunday - Dinner on the road

Next month I'm planning on doing a month's menu and shopping trip to see if that would help us with our budget. I will still be posting a weekly menu and will update about the process.

Recipe Friday - White Chicken Chili

When Butterbean was born one of Chris' co-workers brought us White Chicken Chili for dinner, it was awesome! I had almost forgotten about it until I was trying to come up with something different for dinner. I tripled the recipe and left out some of the heat but it was great.

White Chicken Chili

1 lb ground chicken or turkey
1 onion, chopped
3 cloves garlic, minced
2 cans chopped green chilies
3 cans white beans (cannelloni or great northerns), 2 cans drained, the third can pureed.
1.5 qts chicken stock
1 tbsp cumin
1 tsp cinnamon
1 tbsp oregano
Salt and pepper to taste
Montery Jack Cheese, shredded

In large stock pot over medium heat cook onions until soft, add chicken and garlic. Cook until browned through. Add chilies and seasonings, saute 5 minutes. Add beans, chicken broth and pureed beans. Simmer over medium-low/low heat for 30 minutes. Serve topped with cheese.

Warning: this will make your house smell really good!

Birthday Party

We celebrated Butterbean's birthday with an owl themed party. Invitations stated 'Guess Whooo's One ...'

And everyone else's, they got Ukrop's cake instead of being subjected to my baking!

Daddy helping to open presents, this was about as far as butterbean got opening, after that she was more interested in giving paper to everyone (at least she shares!)Butterbean was also not interested in digging into her cake, we had to find a spoon and then she still only took one bite!

Menu Monday

Wow, hard to believe that we have just begun another new year, time really does fly by. I've been quiet lately due to holiday business and then all of us were at home sick (great way to start the year!)

Things should settle down and get back to normal (after the birthdays are over) soon.

Wednesday - Fish sticks, sweet potato fries, peas
